Spaghetti Pie

    Serves 6

Recipe by Nancy Phillips

My mother-in-law, nancy Phillips, gave me this quick and easy recipe.  My husband, Reed, grew up eating it for dinner  many times.  I make it now, and I'll say that it's "simply delicious!".
  • 6 ounces dry spaghetti
  • 2 large eggs, beaten
  • 1/4 cup freshly grated parmesan cheese
  • 2 tablespoons butter
  • 1/3 cup chopped onion
  • 1 cup sour cream
  • 1 pound Italian sausage
  • 1, 6 oz. can tomato paste
  • 2 teaspoons sugar
  • 1 cup water
  • 4 ounces mozzarella cheese, sliced
  • salt and pepper, to taste

1.  Grease a 10 - inch pie plate or an 8 x 11 inch oblong baking dish. Boil salted water in a large pot.  Break spaghetti in half and cook, until just done, in water.  Drain.

2.  While still warm, combine spaghetti with eggs and parmesan and pour into pan.  Pat mixture up and around sides with a spoon.

3.  Melt butter, add onion and saute until limp.  Let cool slightly and then stir into sour cream.  Spoon mixture over spaghetti.

4.  Remove sausage from casing.  In a large skillet, crumble sausage and cook in skillet until done.  Drain, and place cooked sausage back into skillet.  Stir in tomato paste and water.  Simmer for 10 minutes. Let cool to tepid. Spoon sausage mixture over sour cream mixture.

5.  In the meantime, place oven shelf in the middle of the oven and preheat it to 350 degrees F.

6.  Bake for 25 minutes.  Arrange mozzarella on top and return to oven until cheese melts.

NOTE:  This freezes well before baking.
