Two layers separating from one another usually has to do with heat--not enough or too much so the layers adhere together. In the case of chocolate covered toffee, after spreading the toffee in the pan, IMMEDIATELY sprinkle chocolate morsels over toffee; let stand 1 minute or until chocolate begins to melt. Spread chocolate over entire candy layer; sprinkle with walnuts. Let stand until set." It sounds like the toffee is cooling a bit towards the end of the process so the chocolate does not adhere to it properly. Try making a smaller batch at a time -- not a whole big batch which I once did at Christmas time -- what a disaster! Plus, I too, gained weight eating all the rejects!!
