The cake that covers the side of a cake is made from a joconde cake recipe (a type of sponge cake). To get the strips, the cake batter is thinly spread within a biscuit frame on a special decorated cooking paper sheet. After baking, cooling and freezing overnight, it is placed along the inside of a cake ring and filled with mousse, etc. The joconde cake will become the outside of the cake when the ring is removed.
