You should just follow the recipe directions as far as kneading dough. If a recipe says don't knead too much, you don't. If a recipe says, knead gently, you follow exactly. Over kneading can cause dough not to rise properly just as underkneading can cause problems too. Just follow the kneading directions of the recipe.
