Have you ever looked at the "Professional Pastry Chef" by Bo Friberg? I haven't seen the new edition, I have the second and it is filled with amazing cakes and goodies. For a Christmas special I would look at classic dacquoise, especially with a chestnut filling. This is a traditional flavor. Also, chocolate is great for any occasion.
