Chemicals for baking, such as cake emulsifiers, are not available to the home baker. Natural emulsifiers exist as in egg yolks, and if there are multiple eggs in a recipe, some often substitute one whole egg for 2 egg yolks in certain cakes, such as buttercakes. It doesn't work as well when there is only one egg in a recipe. Other emulsifiers are found in gelatin, milk and mustard.
