Hi, I have a few questions about beating egg whites-- is it safe to beat egg whites in a metal bowl, I always use this bowl, but have noticed scarring at the bottom from the beaters--is this coming off ?? I read you're not supposed to use plastic bowls ..And I've noticed the recipes that use beaten egg whites added separate from the yolks yields a much moister cake--could you do this for recipes that add eggs whole??Thanks
